Ingredients:-
Red Pumpkin 200 gm
Jaggery- 200 gm
Ghee - 1 tsp
Nutmeg Powder - 1 Pinch
Elaichi Powder - 1 Pinch
Salt - 1 Pinch
Safed Til 1 tsp
Khaskhas 1 tsp
Rice Flour - 1 tsp
Wheat Flour - 2 Cups/ As per requirement
Method :
1. Grate Pumpkin
2. Keep Kadai on flame, add ghee and Grated pumpkin
3. Roast pumpkin in ghee properly then add Jaggery
4. Cook pumpkin for 5 min or until it cooks properly in jaggery water
5. Let it cool, take platter and add mixture of jaggery and pumpkin along with Til, Khaskhas, Nutmeg powder, Elaichi powder, Salt, Rice flour and add wheat flour as per requirement
6. Do not use water to make dough, combine the mixture and finish it with ghee; form a dough
7. prepare equal parts of the dough and shape it over rolling board slight thick in size and cut it in your desired shape or round shape with any sharp Vessel.
8. Keep oil on heat for frying, add the gharge and fry it untill golden brown on low- to medium flame.
9. Serve it hot or cool and enjoy your healthy Sweet Dish.

Sweet Pumpkin Bread (भोपळ्याचे घारगे )
Ingredients:
2 cups chopped pumpkin (Or Readymade Pumpkin Puree)
1 cup of whole wheat flour
1 cup of rice flour
A pinch of cinnamon powder
1 cup of grated jaggery
Oil for deep frying
¼ cup oil for the dough
Water
A pinch of salt
Procedure:
1. Cook chopped pumpkin with ½ cup water in a pan on low heat for 7-8 minutes. (Skip this step if using readymade pumpkin puree)
2. When the pumpkin is soft add the jaggery and continue to cook till it melts.
3. Cool the syrupy mixture to room temperature and set aside. Use it to knead the dough as follow.
-Heat ¼ cup of the oil in a kadai.
-In a dry bowl take wheat flour, rice flour, and cinnamon and mix.
-Make a well in the center and pour hot oil. Mix everything carefully.
-Add the cooled pumpkin and jaggery syrup and mix.
-Add very little water and knead into a stiff but pliable dough.
-Cover and rest the dough for an hour.
-Heat the oil for frying in a pan.
-Shape the dough into small balls and roll out the charge, slightly thicker than puris.
Deep fry till golden in color.

Gharge
A typical maharashtrian delicacy Gharge made with easily available ingredients in your kitchen wheat flour, pumpkin, jaggery, cardamom and little bit of rice flour.
The best quality pumpkin is available during the holy month of Shravan and hence that is the best time to make gharge. This is a delayed post mainly because I forgot to click pictures when I made it during Shravan.
Recipe
1 tsp ghee
1 cup grated pumpkin (do not use the pumpkin with the green peel... preferably the one with )
3/4th cup grated jaggery
Roughly 2 cups wheat flour
1 tbsp rice flour
Pinch of salt
1/2 tsp cardamom powder
Little bit nutmeg powder (optional)
In a pan add 1 tsp ghee and saute the pumpkin, pinch of salt and cook stirring continuously for a few minutes, then add jaggery and stir well till it dissolves and cook for another 5/6 minutes.
Switch off the flame and let it cool. Now add the cardamom and nutmeg. Can puree and use or use as is. Now add wheat flour and rice four little at a time and knead to form a proper dough. You may or may not need the entire 2 cups of wheat flour depending on the type of wheat and its capacity to absorb the mixture. Do not add water. Knead a dough like we make for pooro and either roll out the poori or use a poori press and deep fry.

तवसाचे घारगे!
किंवा मोठ्या काकडी चे घारगे
जसे लाल भोपळ्याचे घारगे प्रकार कोकणात करतात तसेच गावरान काकड्यांचे घारगे देखील उत्तम लागतात.
सोपे चविष्ट घारगे बघुया बनवतात कसे ते:
साहित्य:
गावठी काकड्या: ४-५ नग (साले काढून खिसून)
देशी गुळ खिसलेला (जेवढा खिस तेवढाच गुळ आम्ही घेतो.)
चवीपुरते मीठ
गव्हाचे पीठ (काकडी आणि गुळ खिसात सामावेल इतके.)
जीरापुड एक ते दीड चमचा
घारगे बनवताना खिसलेली काकडी, मीठ, जीरापुड आणि खिसलेला गुळ एकत्र मिक्स करून काकडीचे सुटलेले पाणी जरा सुकेल इतपत गरम करून परतून घ्या. आणि साधारण थंड झाले की मस्त पुरीच्या पीठाच्या consistency पेक्षा थोडे पातळसर पीठ होईल अशा बेताने त्यात गव्हाचे पीठ मिक्स करा. एकजीव मळून पीठ तयार करा. थोडे लिबलिबीत राहते हे खरे... (तांदळाचे पीठ थोडेसे वापरू शकता.)
आता तेल गरम करा. आणि कर्दळी किंवा केळीच्या पानावर तेल लावून, घारगे थापून तेलात सोडायचे. पातळ थापले असता घारगे टम्म फुगत नाहीत. आम्ही जाडसर थापतो त्यामुळे घारगे टम्म फुगतात. ह्यांना करण्यासाठी सरावाची गरज लागते. सरावाने छान जमतात.
काळ्या वाटाण्याच्या उसळी सोबत घारगे खातात.

Ganeshotsav🎊 is also known as Gauri - Ganpati🙏🏼 festival and that is because there is Gauri Avahan (गौरी आवाहन)🥰 which is celebrated two days before the Gauri Ganpati Visarjan😊. The Gauri or Devi Parvati🌸 comes to take her child i.e. Lord Ganesha back🥺, after he visits us during the Ganeshotsav🥰.
People either bring Devi's Idol or only the head or Mukhauta (मुखवटा)🙏🏼 and worship it from the midnight🌟 of the third last day from the Visarjan day🥺.
And yes obviously🤷🏻♂️ there is always a food🍱 related to each and every Indian occasion❤️. So we make Bhopalyache Gharge🍘 on this day🥰. The dough is prepared by mixing grated Red Pumpkin🎃, Jaggery with Wheat Flour🍚. Round shape is given, a hole is made in between🥯 and they are deep fried🔥.
